Chicken Taquitos

It's safe to say that if there are any pins that have anything to do with mexican dishes with chicken/cheese then I've repinned it! This one is no exception... the original pin came from this site. Here is what their version looked like (again, another model picture)...

So I kept the recipe the same except that I didn't add the lime juice, it's expensive and 1 tbsp certainly doesn't throw off an entire dish... and it certainly didn't in this case! These were super super yummy! My fiance and brother had no problems polishing off the leftovers that night... I would definitely suggest using flour tortillas as the recipe suggested... my experience with corn tortillas isn't good. Also, it's definitely difficult to wrap them up as tight as the recipe suggested. And, as always, I added more cheese than the recipe called for! :) 

PROS - yummmmm!
CONS - not as pretty as the picture... and don't bank on leftovers ;) 

Sopapilla Cheesecake

First of all... YUMMM! When I say this pin, I immediately added it to my list of future desserts! Here is the background... the original pin came from this site. Here is the original picture... try not to drool.



So I gathered the necessary supplies and made my own recipe... the only differences? I cut the recipe in half (because I honestly don't need all of this laying around) and my picture isn't nearly as pretty... BUT it was oh so tasty!!!




PROS - taste, taste, taste and it's super simple to make
CONS - it's a little tougher to tell if it's done because the top is dark from the cinnamon/sugar toping, it makes a LOT so be sure to share!

52 Reasons Why I Love You Album

So a few weeks before Christmas I pinned this deck of cards album as a potential gift for my fiance. The original pin can be found on this site. The original is adorable and super cheap so I was really excited to create this little book!



I went to Target and purchased a deck of cards and a pack of fine point sharpies so I could write on each card. When I first wrote on the cover card, I realized there was an issue.



Each card has a waxy/shiny substance that comes off on the tip of the sharpie and prevents it from writing. Solution... cut out little squares of paper and glue them on the inside with the writing.



So here is the PRO-CON breakdown of this project...

PROS - price (total cost was less than $6), unique/creative gift
CONS - the substance on the cards surface and being forced to glue on paper to each card
